I have a list of unsold items but they are mixed with the sold ones. How can I create a group (alphabeically ordered, if possible), of the unsold ones?

What you could do is:
Create a new group ("+" button in the toolbar) and put all sold listings into this group. You can right-click on the group and select “Sort by name”.
What you could also do is to create a “smart group” and use the rule “listing state > is > ended”. However, you can’t sort listings inside a smart group so far.
