Is there a macro for us to include the variation price in the description at all?
Also - if this is possible, would Garagesale also update the live listing description (or anywhere the macro is used) if the variation price is changed in GarageSale?

What placeholder exactly are you using for the variation price(s) and are you using the {{ and }} characters instead of the [[ ]] characters?
Placeholders embedded with these {{ }} characters will only be resolved temporarily when you hold down the control and option key in preview mode, and when your listing is uploaded to eBay. So, when revising the listing, the price should get updated, yes.
