I’m moved from a reasonable-sized Mac to a Very Large Mac, and realizing that I am used to some tools in the toolbar being closer to one another. Is “Customize Toolbar” still grayed out since GS 7.0?
All I really want to do is insert a flexible space between the "•••" dropdown and 
media browser icon.
Yes! I would also like a Standard, Customizable Toolbar.
With TEXT labels and separate icons for all menu commands (like Verify, Revise, Relist, Stop, etc).
